Ingredients to serve:

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 1⅓ cup SunRice White Long Grain Rice

  • 1 kg Stewing Beef

  • 2 tbsp Clarified Butter, or Olive Oil

  • 4 Onions (roughly diced)

  • 1 tbsp Tomato Purée

  • 400 g Chopped Tomatoes (tin)

  • 250 g Potatoes (cubed)

  • 1 tsp Caraway

  • 1 tbsp Sweet Paprika

  • 1 tbsp Hot Paprika

  • 400 ml Beef Stock

  • 150 g Sour Cream

  • 1 pinch Chilli Powder

  • 2 Pickled Gherkins (sliced into batons)

Method

  • Fry the meat all over in hot clarified butter. Add the onions and fry for 4-5 minutes.

  • Stir in the tomato purée and add the tomatoes, potatoes, caraway and paprika. Add the meat stock, season with salt and ground black pepper and bring to the boil. Cover, reduce the heat and simmer gently for around 2 hours.

  • To cook the white rice, in a saucepan, add 1 cup of rice to 2 cups of cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes. If you are not sure how, we have a helpful “How to Cook rice section” to make you a pro. If you would like to use a brown rice in this recipe, simply add an additional ½ a cup of water.

    Tip: For a quicker alternative, we also have a range of ready rices, that are ready to eat in 90 seconds!

  • Stir the sour cream and sprinkle with chilli powder. Put the sour cream and gherkins in two bowls.

  • Check the seasoning in the goulash and serve on a bed of rice with the gherkins and sour cream.
